Hi, friend! As you may know, one of my favorite things to do is bake. But one of the things I struggled with for the longest time was creating the perfect vanilla cake foundation. I tried countless recipes and elevated box mixes to no avail. They were always too dry, or too dense, or too flavorless.
Eventually, I developed a recipe that makes baking SO much easier. I have a vanilla cake mix recipe that I can store in an air tight jar and use to make any cake in less than five minutes. It even can be a great gift idea! I also love that it has simple ingredients and always produces a moist and fluffy cake that is easily customizable, like in my Raspberry Cream Cheese Mini Cakes.
All that’s in this cake mix is flour, sugar, vanilla pudding mix (substitute whichever flavor goes with your cake best), powdered buttermilk, baking powder, baking soda, and salt. And to make the cake of your dreams, all you need to do is add vegetable oil, water, vanilla extract, eggs, and any other additions you desire. This homemade cake mix can literally replace ANY recipe that calls for a box of cake mix.
