Birthday Cake Overnight Oats!

Hey there, friend! I hope you’re having a great day! Today I’m sharing a recipe that is not only nutritious, but will make you feel nostalgic for all of the birthday cake-filled memories of your childhood. Introducing, Birthday Cake Overnight Oats!

I remember trying overnight oats a few years ago and not liking them because of the texture. They also left me feeling hungry sooner than I would have liked. Recently, I’ve been trying to cut down my time in the kitchen in the mornings, so I decided to give them another shot. And what better way to do it than with one of my favorite flavors…birthday cake!

I had to start by making a new base that would not only taste great, but keep me satiated through the morning. I decided to add greek yogurt, chia seeds, and vanilla protein powder (I use the Just Ingredient’s brand) to my simple overnight oats recipe to add more protein, healthy fats, and fiber to the meal. I’ve loved it so far! Not only does it taste great, but it only takes 5 minutes to prep and I’m able to prep 4-5 days worth at a time and just keep it in my fridge. I literally don’t even have to worry about breakfast–how awesome is that?!

To give these Birthday Cake Overnight Oats their signature flavor, I used cake batter extract and rainbow sprinkles. They don’t always have cake batter extract in stores, so you can easily substitute vanilla extract, a tiny bit of almond extract, and butter extract to replicate that signature birthday cake taste.

I like to prep my overnight oats in a glass jar so I can grab-and-go and also it just makes storage and organization that much easier. All I do is dump all of the ingredients in the jar, stir, and refrigerate overnight. Thats. It. I like to add some of my homemade granola (recipe coming soon 👀) to the top for an extra crunch!
